I'm getting ready to smoke a pork butt, I need a good rub recipe. I am also looking for a good rib sauce recipe. I know this is fertlie ground for your special humor, so please be kind. Smile

Thanks Lost! Do you typically inject your butt? Or do you just dry rub it? I think just the rub would be good and then maybe a dipping sauce. Just got a new smoker, so I will be experimenting this weekend.

I have never tried to inject my butts a good rubbing is all you really need. For butt the dipping sauce is key although I have yet to find the perfect sauce.

This is the rub I ended up using:

6 tb Brown Sugar
2 tb Kosher Salt
1 tb Chile Powder
1 ts Thyme
1 ts Onion Powder
1 ts Garlic Powder
1 ts Paprika
1 ts Old Bay
1 ts Cayene
1 ts Celery Salt
1 ts Black Pepper
1 ts Dry Mustard


The only problem I had was that I removed the butt too soon. I took it out of the smoker when the internal temp was 175 degrees. I figured it would cook up another 10 degrees after removal. Although it was very juicy and tender, I couldn't pull it for sandwiches, which was my goal. Next time I will cook it up to 190 degrees. The other problem I had was that it was tough to regulate the temp of the smoker, usually it sat at 250 degrees, which caused the pork to cook a bit more quickly than I had wanted.

I have not yet found a good dipping sauce either.

Do you mop yours? If so, with what?
