Just in time for Thanksgiving and Christmas:
CRANBERRY RELISH (Presents very pretty in a nice glass bowl) This is a nice pleasant mixture to serve with turkey. It does not turn out "rubbery" like typical relish. Try to make night before!! 1 large Cherry Jello® 1 large crushed pineapple (#2 can or the large can-don't drain) 1 package/bag whole cranberries (grind up) (in produce section) 1 tsp lemon juice (real-lemon in jar/bottle-OK to use) 1½ C. sugar 1C. celery, chopped..(I never use celery, this alters it a little bit, but it’s your choice) 1 orange -with peel- minus seeds Dissolve Jello in 2 cups boiling water. Let cool to just setting, not gel. Grind the orange, peel and all*...Add all ingredients together*. Add cooled, slightly set Jello, to the mixed ingredients. Gently mix. Refrigerate over night. *PS I usually grind all the fruits at one time in a good chopper/food processor. Don’t puree/pulverize or make it into a powder, just chop up into very small pieces. Then add your sugar, lemon juice and pineapple, etc, to the chopped mixture. Lastly, add the cooled Jello and gently mix. Next day it will be nice and firm. It is excellent to freeze...You might want to have some frozen to thaw for the holidays. I wish I had a picture of this to show final result. |

Yes, this part scares the crap out of me every time I make it. Get a nice large fresh orange-colored orange (ripe, not under ripe) and it will alter the taste of the bitter cranberry into heaven. It took some convincing on the part of my dear mom, but once you plop it into the food processor, seconds later, it's in little edible pieces. And I do stress second. Actually if the food processor has a ‘burst’ or ‘pulse’ button on the machine, that work’s best. Smells wonderful! Cut in half to check for seeds just in case. Believe it not there won’t be an explosion of juice.

I'd share our secret family recipe for Cranberry Salad except that I would likely end up divorced. The family (including the husband) do not look fondly on my sharing it. Suffice to say, it's delicious and nothing like that gelatinous glob that comes in a can. The recipe above looks pretty tasty too.

I have had so many different cranberry relish recipes over the years, but my favorite is the one on the back of the cranberry package recipe. It is so simple: cranberries, sugar, and water. If there is any left over after Thanksgiving, I put it on lime sherbet and pig out!

Hey wow, I'm honored you tried it. Thanks. Smells good doesn't it? I'll probably make mine tonight and then freeze. We're driving 3-4 hours to Wisconsin Thursday morning. We'll let it thaw in the cooler on the way up!
