This is a nice recipe to use up any leftover ham. I made this for dinner last Friday and forgot how good and light it is.
Another recipe I have that is good to use up leftover ham is called Farmers Casserole. It is a breakfast or in our house a brunch dish. If any of you would like to have it let me know and I will post it. 1 lb. uncooked penne pasta 3 c. cubed fully cooked ham 1 lge. sweet red pepper, diced 1 med. onion 1/4 c. minced fresh parsley 2 garlic cloves, minced 1/2 tsp. basil 1/2 tsp. oregano 1/4 c. olive oil 3 tbsp. butter 1 tbsp. lemon juice 1 14.5 oz. can chicken broth (reduced sodium version is what I use) 1/2 c. Parmesan cheese Cook pasta according to package directions. Meanwhile in large skillet saute ham, red pepper, onion, parsley, garlic, basil and oregano in oil and butter for 4-6 min. or until ham is brown and vegetables are tender. Stir in broth and lemon juice. Bring to a boil. Reduce heat and simmer uncovered for 10-15 minutes or until liquid is reduced by half. Drain pasta, stir into ham mixture. Sprinkle with Parmesan cheese. Serves 6. |
