I made these last night. Really excellent. I cut the cucumber in 1 1/2 or maybe 2" slices instead of 3", which seemed a little too large for a nice 'bite.' Worked fine. Nice because doesn't require crackers, so low cal for an appetizer and very elegant. Oh, use a melon baller to scoop out the seeds:

Devilled Crab In Cucumber Cups

Ingredients and Directions

3 c Cooked crab meat, flaked. <One can of Trader Joe's Premium Crab meat, located in the cheese section>

2 ea Hard boiled eggs, chopped.

1/4 c Lemon grass, sliced fine. <make it easy on yourself and buy the tube of lemon grass in the produce sections at Dominick's>

1/4 c Onion, chopped.

2 tb Nam-prik Pao. <Thai Red Chili Sauce>

2 tb Fish sauce.

3 tb Lime juice.

1 tb Sugar.

2 tb Scallions, chopped.

2 tb Corianders leaves, chopped.

Mix all ingredients together and fill cucumber cups. To make cucumber cups - Peel and cut cucumber crosswise approximately 3 inches thick, and scoop out seeds to make cups. Mix 1/2 cup white vinegar with 1/2 cup water, 1 tb salt, and 1/4 cup sugar. Add the cucumber cups and marinate for about 1/2 hour, then drain off and discard liquid.

This sounds delish. I'm a complete fan of fish sauce. I love Vietnamese food, especially spring rolls. I use fish sauce instead of the peanut sauce for them and it's unbelievably good! Thanks for the recipe!

I don't have any coriander(s) can I use Cilantro?

P-dog, I omitted the coriander all together, but I have a feeling cilantro <if you're a fan of it> would be a nice addition. This is probably one of the best summer appetizers I've ever made.

LW, I also love the addition of fish sauce to make things a bit more SW Asian. Plus, what a bargain! A huge bottle at Dominick's is a little more than $2.

Hope you two give it a try. Let me know if you do.

Are these cups or "rolls"? You can only get two cups out of each cucumber. Do you also stuff the cylindrical sections or do you just buy a lot of short cucumbers?

I bought about 4 medium-sized cucumbers from Trader Joe's. I then sliced the cucumbers into about 1-1/2-2" slices and then scooped out the seeds, creating a 'cup' to hold the crab salad. Each cucumber made about 4-5 'cups.'

I tried making it myself and it tasted terrible. Do you think it’s because I used grass from the front vs. the back yard?
