I just found this recipe over the weekend and thought this would be a good and quick meal. I ate a bowl for lunch and it is yummy. In fact it is the best meal I have had for several days!

Roasted Red Pepper & Tomato Soup

2 tablespoons butter
4 sliced green onions (if they are large use 3 instead of 4)
28 oz can diced tomatoes
12 oz jar chopped and seeded roasted red peppers
¼ tsp dried basil
salt and pepper to taste
1 can chicken broth
1/2 cup heavy cream

Sauté onions in butter for 2 minutes, add all remaining ingredients except cream and simmer for 10 minutes, add cream and heat for about 2 minutes.

Please don't take this too personally, Fan, but you really didn't sell the whole estate plan/will as a prize. The first name on the firm must be in charge of marketing, right? Wink

I am excited about Blue Echoes' offer. That is very nice of him.

As for Fish/Phish - that was my first laugh of the day. I should have known better . . . . Roll Eyes
